I am so thankful for the comments each one of you left yesterday after the blog I posted.  It meant a lot to me and want you to know that I too, am here for you to vent about anything that concerns you.  It seems the main consensus would be to check out assisted living homes, and I have thought about that.  I discussed it briefly with our children too.  It may be that one day soon, we will have to do that very thing.  Again, I appreciate your care and concern.

Pinterest - how you have invaded my home! lol I made something new and I either got the recipe from there, or off TV.  None the less, I made them........
Mini-Chicken Pot Pies!
Talk about easy, wow....Pillsbury Grand Biscuits, flattened to form a crust and put in cupcake tins.  Mix the veggies, cut up chicken, and add 1 can cream of chicken soup. There you have it...place a spoonful in each crust, bake at 350 degrees for 15 minutes.
I did spray the cupcake tins just to make sure they would come out easy.

Now, did we like them?  No.  Did I like the idea of the crust with something else in them?  Yes. I may give it another try with maybe fruit or other veggies.  I bought the frozen veggies and they tasted frozen, even after being baked.  But the idea is a good one, and will have to tweak it a little!

Church for us this morning.  It is still cold, but not unbearable like the first of this past week.

I am sleeping better.....not broken sleep either, and an hour or so later than my usual 'getting up' time.  I am thankful for that.  No other news, so I wish you a wonderful day.

  1. I wondered if those pot pies were good, wink. It seems most of the country is invaded with cold air...the winter blues (I call it the that), sigh. Thank you for being my friend, Linda. As much as I love winter--I still get the blues, prob lack of sun, lol.

    Ahhhh, Pinterest.
    Sometimes I think it is great.
    Sometimes, I fear all the shortcuts are going to replace good old fashioned know how cooking!

  3. I think that recipe is on TV, but it's probably on Pininterest too. :) It sounds good but now I know if we make them they need to be tweaked. I think I would enjoy them more if there was a crust as well.
    I'm glad the thoughts shared where helpful. I can't imagine how heart rending it must be to have to make this kind of decision. Thank goodness you have the children to help. I pray that whatever is decided benefits all according to God's will. I will continue to pray for y'all and keep you in our thoughts.

  7. Pinterest doesn't always have the best recipes. I've seen a similar recipe using Bisquick for the crust, which I think might taste better than the biscuit dough. Keep us posted as you tweak!!

  8. Always a bummer when you make a recipe off Pinterest and it does not turn out right. Maybe if you try again it'll be better!
