THURSDAY

As if you didn't know what day it was, I typed it in my post title....:-)  Sun is shining and sky is blue.
My Sunday School class meeting is today and going to a 'mom and pop' restaurant about 35 miles from here.  I am not going because Jim is having another low time.  His legs just 'give' out under him without any prior warning.  I just didnt want to be that far from him.

I know you wanted to know....NOT, but I put a roast in the crock pot yesterday morning, and made an apple cobbler for supper last night, and I have to say....both were excellent.  If you havent tried the southern cobbler yet, you are missing an easy and excellent dessert.  Repeating the recipe:

Southern Cobbler:
1 cup self-rising flour
1 cup sugar
1 tsp of cinnamon or any spice that goes with the fruit
1 stick of real butter
3/4 cup milk
1 can of fruit pie filling (any kind)
8x8 square (or round) baking dish. Preheat oven to 350 degrees. While the oven is preheating, get the dish and put a stick of butter into it.  Put the dish in the oven to melt the butter.  While that is melting, mix your flour, sugar, milk and spice and stir til well blended.  Add the can of pie filling to the melted butter and stir. Pour the mix over the fruit but DO NOT STIR.
Bake for 60-80 minutes.
You wont be sorry you tried this one.  Good for family, good for taking to church functions, good for taking to a new neighbor, to a sick friend, to someone who just had a baby, etc., etc.

I don't suffer from insanity;
I enjoy every minute of it.

  4. I love your leading picture and the pretty page. I've had times where I've felt like that little girl, except give me chocolate bars. lol
    So sorry Jim is having a rough time and you don't feel comfortable leaving him alone. I would feel the same if it were me. You need someone to be able to stay with him once in awhile so you can have some time away.
    I'm copying your recipe. Sounds so good and easy.
